And now for something completely different...

So, I was making the same old, same old for dinner & looked down at the Shake & Bake box and inspiration hit. There was a recipe on the box and I realized I had everything it had (and more) so I dabbled with it and came up with a whole new way to bake chicken.

zucchini, chopped
onion, chopped
fresh garlic, sliced
mushrooms, sliced
1 can low sodium tomatoes with juice
oregano
parsley
Parmesan

Combine all ingredients in a casserole dish. Top with shake & bake chicken. Bake @ 375 for 35-40 minutes. Serve over farfalle pasta. Not only was it delicious, Matt ate up all the zucchini (usually a veggie he ignores like the plague).

So yum. Try it. It's really good & super easy...
