Italian Chop Salad...

Sometimes necessity is the mother of invention...Thanks to the coop combo this week I came up with a new salad I love! I'm calling it my Italian Chop Salad...

Chop & toss the following ingredients:
lettuce, grape tomatoes, red onions, banana peppers, mushrooms, pepperoni, feta cheese, parmesan, red pepper flakes & oil and vinegar dressing.

Yum - I highly recommend. Enjoy...

My aunt & uncle belong to a neighborhood produce coop that has banded together to buy in bulk from the local growers assoc that sells to our area supermarkets. So every week we all pitch in and one of us goes down there around 5 am & shops for the whole group & parcels out everyone's stuff for the week.

Matt & I got a permanent "half order" spot about a month & a half ago - we've been a "permanent sub" for about 2-3 years waiting for a spot to open up.

So for about $7 a week we get a gigantic box of "surprise" fruits & vegetables. It's great. It's giving us a ton of variety and encouraging us to come up with and try new recipes to work our way through the fresh goodies in the box before the next one arrives.

This week our box brought us: lettuce, cilantro, spinach, grape tomatoes, zucchini, oranges, white grapes, peaches, plums & kiwi.

i'm a little jealous of this coop thing of yours... i wish someone would send me a variety box of veggies for $7 a week! :)

What a great idea and what a great price!

Thanks for the salad idea...I'm always stuck on what to make since the boys aren't so crazy about salad. LOL!!
